SRM which is spinal cord from older sheep or goats may be removed in a cutting plant which is authorised by the FSA for this activity, or in a slaughterhouse where no specific authorisation is required. The harvesting of bovine head meat must only be carried out in a cutting plant which is authorised by the FSA for this activity.
